Quinoa Tabbouleh

As you may know, I love cooking up a batch of quinoa (or any grain) to keep in my fridge for the week. Cooked grains are easy to add to any meal including this refreshing, perfect-for-warm-weather tabbouleh!

Quinoa Tabbouleh

Ingredients:

1 cup quinoa

1 lemon, juiced and zested

2 tablespoons olive oil

ยฝ English cucumber, diced

1 cup chopped flat-leaf parsley

1/2 cup chopped fresh dill

1 can chickpeas, rinsed and drained (optional)

Preparation:

1. Cook quinoa per package instructions, cool

2. Combine remaining ingredients in a bowl, add quinoa

3. Salt and pepper to taste
