Did you know that wild blueberries have twice antioxidants of their cultivated counterparts? This is great news as we enter cold and flu season. Easy to find in your freezer section, frozen wild blueberries are delicious in both sweet and savory recipes. One of my favorites is a Wild Blueberry Quick Bread, which is a staple in my house. We also love smoothies, and wild blueberries add the most beautiful color to this Almond, Wild Blueberry and Flax Smoothie recipe I adapted from my new cookbook, Whole Cooking and Nutrition. It is the perfect way to fend off a cold!
Almond, Wild Blueberry and Flax Smoothie
Servings: 2
1 ½ cups frozen wild blueberries
1 ½ cups unsweetened almond milk
1 tablespoon almond butter
3 tablespoons ground flax
2 teaspoons honey
Ice
Combine all ingredients in a blender and serve.
Make it minty:
1 ½ cups frozen wild blueberries
1 ½ cups unsweetened almond milk
2 tablespoons almonds
1 tablespoon fresh mint
2 teaspoons lime juice (lime zest would be nice too)
3 tablespoons ground flax
2 teaspoons honey
Ice
Combine all ingredients in a blender and serve.
