Healthy Snacks at Home by Aneu Restaurant & Catering

Chef Meredith of Aneu Kitchen & Catering demonstrates how to make simple and healthy snacks at home, including a PB&J Smoothie, Energy Balls, and Hummus!

PB&J Smoothie

Ingredients

1 cup Fresh spinach
1 frozen banana
1/2 cup frozen berries
1 Tablespoon Organic smooth peanut butter
1/2 tablespoon honey (optional)
1/2 tablespoon hemp seed
1/2 cup almond milk
Small scoop ice

Directions

Start from the bottom and add all ingredients in to your high speed blended and blend until smooth! 

Energy Balls

Ingredients

1 cup oatmeal
1/2 c toasted coconut flakes
1/2 cup peanut butter
1/2 cup ground flax seeds
1/2 cup vegan chocolate chips or dark chocolate chips
1 T chia seeds
1 t vanilla extract
10 dates (pitted and soaked overnight)

Directions

Put all ingredients, except chocolate chips, in food processor and process until it comes together.  Empty in to large bowl and stir in chocolate chips. Form into 1 ounce balls, refrigerated, and enjoy. May be frozen.

Hummus

Ingredients

1 box garbanzo beans, drained and rinsed 
1/2 cup tahini
1/4 cup fresh lemon juice ( 2 lemons)
Pink Himalayan sea salt
2 cloves minced garlic
2-4 Tablespoons ice water
1/2 teaspoon cumin 

Directions

Mince garlic in to food processor and squeeze lemon juice on top of garlic Wait a few minutes and then add the rest of the ingredients.  Blend until smooth.

For a lighter, flufflier hummus, cook garbanzo beans in 1/2 teaspoon baking soda and water for 20 minutes. In a pinch straight out of the box/can is great too.
