Green Goddess Dressing by REAP Wellness

About 1 pint of dressing

Tools

Vitamix, food processor, or other type of blender
 
 

Ingredients

Juice of 2 limes
4 scallions
1/2 cup cup basil
1/2 cup cilantro, including stems
2 garlic cloves
half an avocado
1 teaspoon salt
pinch of pepper
1/4 teaspoon red chili flakes
1/2 cup olive oil
1/2 cup water to thin

 

Directions

  1. Peel and roughly chop your garlic and scallions.
  2. Add all ingredients to your blender or food processor and blend. If too thick, add more water until it reaches your preferred consistency.
  3. Store in the fridge; will keep for 4-5 days.

Suggested uses for Green Goddess Dressing

 

Tacos

Heat up a tortilla on a pan. Add black beans spiced with paprika, cumin, and other spices. Add veggies such as summer squash, mushrooms, corn, and radishes. Top with green goddess dressing and garnish with greens and pickled onion.
 

Salad

In a bowl, combine arugula, spiced black beans, sauteed mushrooms, tomatoes, corn, radish, and cilantro leaves. Drizzle green goddess dressing on top.
