Berry Compote Over Sweet Ricotta

  • Medium saucepan
  • Medium mixing bowl
  • Fork or potato masher
  • Whisk
  • Measuring cups/spoons

Compote ingredients:

  • 12 ounces strawberries fresh or frozen, hulled and chopped
  • 12 ounces blueberries fresh or frozen
  • 12 ounces raspberries fresh or frozen
  • 2 tablespoons honey
  • Juice of 1 lime

Sweet ricotta ingredients:

  • 32 ounces ricotta
  • 1 tablespoon honey
  • 2 teaspoons vanilla
  • Crushed nuts of choice to serve (pistachios, almonds, walnuts)

Directions for the compote:

  • Combine the strawberries, blueberries, and raspberries in a medium saucepan. Add honey and lime juice. Stir to combine.
  • Bring the mixture to a boil over medium-high heat, stirring occasionally, for about 5 minutes.
  • Once the berry mixture is boiling and the sugar has dissolved, turn the heat to low. Allow the berries to simmer for about 15 to 20 minutes, stirring often, until the fruit has softened quite a bit, and the compote has reduced by about ½ half in volume.
  • Remove from the heat and use the back of a fork or a potato masher to mash the fruit if you’d like a smoother compote.
  • Let the berry compote cool before serving for about 15 to 30 minutes. It will thicken more.

Directions for the ricotta:

  • In a medium bowl, mix the ricotta, honey, and vanilla with a fork or whisk.
  • To serve, add a dollop of sweet ricotta to a plate. Spoon the compote along with the juices over top.
  • Top with crushed nuts.
