Chocolate Chip Cookie Dough Hummus

Equipment

  • Food processor or blender
  • Measuring cups/spoons

Ingredients
  

  • 2 15 oz. cans garbanzo beans drained and rinsed well
  • ½ cup cashews level if pieces, slightly heaped if whole *
  • ½ cup + 4 tablespoons maple syrup
  • 4 teaspoons vanilla extract
  • 6 tablespoons rolled oats
  • ¼ teaspoon salt
  • ½ cup mini chocolate chips
  • Apples and pears for dipping

Instructions
 

  • Combine all ingredients except the chocolate chips in a food processor (or blender, if using).
  • *Soaking cashews in water for 30 minutes softens them making it easier to process or blend.
  • Puree or blend the ingredients until smooth and well combined, about 2 minutes.
  • Fold in the chocolate chips and serve in a bowl with apples or pears.
