Mediterranean Egg Casserole
This healthy Mediterranean breakfast casserole is a flavorful and nutritious way to start your day. Packed with fresh vegetables, lean protein, and aromatic herbs, it combines the vibrant flavors of the Mediterranean diet in one easy-to-make dish. The casserole features a hearty base of eggs, spinach, bell peppers, and feta cheese, creating a satisfying and balanced meal that is as delicious as it is wholesome.

- Preheat oven to 350 F.
- Grease a 9x18 casserole dish with butter or olive oil.
- In a large pan or skillet, warm olive oil over medium heat. Add garlic and cook for 2 minutes. Add bell peppers and green onion and cook until the bell peppers are cooked thoroughly (about 8 minutes).
- Add spinach and parsley and stir until wilted (1-2 minutes). Turn off and set aside for cooling.
- If not using whipped cottage cheese, use a whisk or fork to briskly stir cottage cheese to break up curds.
- In a medium sized mixing bowl add eggs, cottage cheese, salt, black pepper, and a few dashes of hot sauce (optional). With a whisk, mix until egg yolks and egg whites are blended.
- To this mixture, fold in half of the feta cheese and cooled veggies, and mix well.
- Pour the mixture into greased casserole dish and top with the remaining feta cheese.
- Bake for about 25 minutes or until the eggs are puffy and cooked. The center should only jiggle slightly.
- Remove from oven and let cool on a cooling rack. Serve warm.
- Store in airtight container in the refrigerator for up to 3 days.
