Butternut Squash Farroto

Ingredients
  

  • 1 butternut squash ~2-3 pounds, peeled, seeded, and diced into ½-inch pieces, or 2 bags (10-12 ounce) frozen butternut squash, thawed
  • 5 tablespoons extra-virgin olive oil divided
  • Salt and pepper to taste
  • 1 ½ cups pearled farro
  • 1 yellow onion finely diced
  • ½ cup dry white wine or water
  • 1 bunch Tuscan kale stemmed and chiffonaded
  • 1 quart broth vegetable, chicken, bone
  • ½ cup Parmigiano-Reggiano cheese grated
  • ¼ cup fresh herbs sage, rosemary, thyme, etc.

Method
 

  1. Preheat oven to 425°F. Toss butternut squash with 2 tablespoons olive oil, salt, and pepper on a rimmed baking sheet. Spread in an even layer and roast until squash is very soft and lightly browned, about 25 minutes.
  2. Heat remaining 3 tablespoons of olive oil in a Dutch over or large pot over medium-high heat.
  3. Add farro and cook, stirring, until very lightly toasted and fragrant, 2 to 3 minutes.
  4. Add onion and cook, stirring, until softened, about 3 minutes longer.
  5. Add white wine or water and cook, stirring, until alcohol smell has mostly cooked off and wine has mostly evaporated.
  6. Stir in kale and a large pinch of salt, followed by ½ cup stock. Cook, stirring often, until stock has mostly evaporated.
  7. Continue adding stock in roughly ½ cup increments, allowing it to evaporate and be absorbed between additions, until farro is tender with a delicately chewy bite, about 30 minutes.
  8. Stir in butternut squash, allowing it to mash into farrotto while leaving some chunks intact.
  9. Vigorously stir in Parmigiano-Reggiano cheese and fresh herbs until combined.
