Pistachio & Oats Protein Bites

Ingredients
  

  • ½ cup pistachios
  • 1 cup rolled oats
  • 2 tablespoons chia seeds
  • ¼ cup honey
  • ¼ cup nut butter
  • ¼ cup dried tart cherries unsweetened

Equipment

Method
 

  1. Pulse the pistachios in a food processor 4–5 times until roughly chopped, then transfer to a large bowl.
  2. Add oats and chia seeds to the bowl and mix to combine.
  3. Stir in honey and nut butter until the mixture is well combined and sticky.
  4. Fold in the dried tart cherries.
  5. Roll mixture into bite-sized balls and place on a baking sheet or plate. Refrigerate for 30 minutes to set.
