Thyme Honey Lemon Fizz

Ingredients
  

  • ½ cup water
  • ½ cup honey
  • 4-5 fresh thyme springs plus 1-2 springs for garnish
  • 1 ounce lemon juice
  • A few handfuls of ice
  • 5-6 ounces plain or lemon-flavored seltzer water
  • Lemon wheels for garnish

Method
 

  1. Prepare the syrup: Add water and honey to saucepan and bring to a simmer over medium-high heat. Stir until dissolved. Add thyme sprigs and simmer an additional 5 minutes.
  2. Remove saucepan from heat and let the syrup steep for at least 10 minutes. Let cool.
  3. Add ice, 1 ounce of the cooled syrup, and lemon juice to the shaker and shake gently, 2-3 times.
  4. Strain into a glass over ice, top with seltzer water, and garnish with a lemon wheel and fresh thyme.
